Cooking for Two

I realized tonight that cooking for two can be so much fun! We don't have a set schedule as to when we need to eat and we can eat whatever we feel like making that night. 




Tonight I had Chili Colorado on the menu. It's not something I grew up eating, actually BJ did. His family got me hooked on the meal and now I'm making it just for us. It's only my 2nd time making it, but already I can tell...it's turning out better than the first! I wasn't sure the amounts of spices and sauce to use last time, but this time it's a different story. I put the right amount of sauce in, used the right amount of spices (maybe even a tad more to make it just slightly spicier, yum!) and had it simmer for an hour to get the steak bites perfectly tender. 



This meal consists of thin cut steak simmered in enchilada sauce & rotel tomatoes, served over rice mixed with tomato sauce & cumin. I had a small mishap with the cumin and dropped the spice jar on the floor, which then rolled around and lost half the spices. It dragged my empty can of tomato sauce with it and unfortunately sent any remaining sauce flying across the floor. Even with that small delay and sad misfortune, the meal still turned out spectacular and we have plenty left over to eat another night. Oh happy day! 








Mix and serve with a little sour cream and cheddar cheese and you have yourself something divine on a Friday night...date night for two! 
We stuck in A-Team on blu-ray and topped it off with ice cream for dessert. So...what did you have for dinner?

the original recipe i was given calls for "pato" sauce but it was way too hot for me, way, way too hot so i substituted what i thot was a similar item. you could give it a shot if you like spicy. the cumin story was funny. and i didn't know you had a blog or i would have been reading it.

well, you can see how often i've actually written and updated. lol
it's quite sad, really. i'm hoping to kick things back into gear and do this more often. i read a lot of other blogs that have inspired me so i really want to kick this up and have some fun with it. plus i always enjoy writing, crazy enough. :)
